01 · Why we started
What you taste is the journey, not the cocoa.
The good chocolate in Pakistan is imported. By the time a box reaches a shelf in Lahore it has crossed an ocean, sat in a container, waited in a customs yard and then stood under a shop light. Chocolate is a fat; it does not enjoy any of that. What you taste is the journey, not the cocoa.
The fresh chocolate, meanwhile, was mostly compound — vegetable fat instead of cocoa butter, because it is cheaper and it survives the heat. It does survive. It also doesn’t melt the way real chocolate melts, which is the entire point of eating it.
So the question we set out to answer was narrow and stubborn: can you make chocolate here, properly, with real couverture and whole nuts, and get it to someone’s hands while it is still young? The answer took [N] months and a great deal of ruined chocolate, but it is yes.
02 · The nuts come first
A chocolate brand that is really a nut brand.
Most filled chocolate hides its nuts — chopped small, mixed into paste, stretched out with sugar. We put them in whole, which means we cannot hide a bad one. A stale almond ruins the piece it sits in, and there is nowhere for it to go.
Our almonds and pistachios come from [SOURCE — region/supplier, to confirm]. We roast and skin them the same day they go into chocolate, in batches small enough to taste as we go.
03 · How a box is made
Four days, start to doorstep.
Roasting
Day one · Roast
Nuts roasted, skinned, cooled. Anything that smells tired is thrown out, not blended in.
Tempering
Day two · Temper
Couverture brought up, down and back through temperature by hand on marble. This is what gives the snap.
Setting
Day three · Set & finish
Moulded, nut-set, rested in a cool room overnight. No fans, no shortcuts to force it.
Boxing
Day four · Box & go
Boxed by hand, dated, your key tucked under the lid, out the same day.
04 · What we will and won’t do
Our standards, in writing.
Real cocoa butter, never compound
If we ever can’t source proper couverture, we stop making that product. We don’t substitute quietly.
Every ingredient on the page
Full list and allergens on every product, before you buy, not on a label you read after.
We will tell you what’s in season
Some nuts are better at certain times of year. When one isn’t good, that product goes out of stock instead of getting worse.
Nothing we wouldn’t send our own family
[FOUNDER NAME] checks the last box of every batch. If it isn’t right, the batch doesn’t ship.
The draw is run in the open
Published rules, recorded draws, named winners. We’d rather over-explain it than have anyone wonder.
No invented reviews, ever
Every review on this site comes from a verified order. When we had none, we showed none.
